Transcript of Tasting Notes for Cantina Tavagnacco Pignolo Riserva
Phenomenal wine! Made like an Amarone with the plump Pignolo grapes being dried in the Italian sun to intensify the flavours before being fermented in oak barrel. The wine is left in barrel on the lees for as long as possible before being transferred to a new barrel to continue fermentation. This process is repeated until absolutely all sugar is converted to alcohol to create an intense, thick wine, with complex flavours of prune, balsamic and vanilla. VERY LIMITED PRODUCTION. Pignolo literally means 'fussy'; it's a difficult grape to grow and the Riserva is very labour intensive to create but it is totally worth it!
